For the Chicken Marinade
¾ kg boneless, skinless chicken thighs or breasts (sliced into strips)
¼ cup coconut milk
2 tbsp soy sauce
1 tbsp fish sauce
1 tbsp brown sugar
1 tbsp lime juice
2 tsp curry powder
1 tsp ground coriander
1 tsp turmeric
½ tsp ground cumin
½ tsp salt
2 cloves garlic (minced)
1 tsp grated ginger
1 tbsp vegetable oil
Wooden skewers (soaked in water for 30 minutes)
For the Peanut Sauce
½ cup creamy peanut butter
2 tbsp soy sauce
1 tbsp brown sugar
1 tsp sriracha or chili paste (adjust for spice preference)
1 tsp grated ginger
1 clove garlic (minced)
½ cup coconut milk
1 tbsp lime juice
2 tbsp water (to adjust consistency)
