2 ribeye steaks (1 to 1.5 inches thick)
2 tbsp olive oil
Salt and freshly ground black pepper (to taste)
Optional: 1 tsp smoked paprika or crushed red pepper for added depth
For the Chimichurri
1 cup fresh flat-leaf parsley, finely chopped
3 tbsp fresh oregano (or 1 tbsp dried)
4 cloves garlic, finely minced
½ tsp red pepper flakes
½ cup olive oil
2 tbsp red wine vinegar
Juice of 1/2 lemon
Salt & pepper to taste
Prepare the Chimichurri
