These Bacon & Blue Cheese Stuffed Dates are a match made in appetizer heaven: sweet Medjool dates stuffed with tangy blue cheese, wrapped in smoky bacon, and baked until crispy on the outside and gooey inside. Each bite is sweet, salty, creamy, and a little indulgent — perfect for holidays, wine nights, or upscale snacks.
Preheat oven to 375°F (190°C).
Make a small slit in each date and remove the pit if not already pitted.
Stuff each date with about ½ teaspoon of blue cheese. Don’t overfill — just enough to create a creamy center.
Wrap each stuffed date with a half slice of bacon.
Secure with a toothpick and place seam-side down on a parchment-lined baking sheet.
Bake for 15–18 minutes, flipping halfway through, until bacon is golden and crispy and cheese is slightly melted.
Let cool for a few minutes (they’ll be very hot inside!).
Arrange on a platter.
Drizzle lightly with honey or balsamic glaze for a sweet-acidic finish (optional but delicious).
