 2 ripe bananas, peeled and sliced lengthwise or into thick coins
 ¼ cup unsalted butter
  cup brown sugar (light or dark)
 ½ tsp ground cinnamon
 ¼ cup dark rum
 ½ tsp vanilla extract (optional)
 Vanilla ice cream (for serving)

Make the Caramel Sauce

  1. In a large skillet over medium heat, melt the butter.

  2. Add the brown sugar and cinnamon. Stir until smooth and bubbling.

  2. Cook for 1–2 minutes on each side until tender but not mushy.

Flambé (Carefully!)

  2. Carefully ignite with a long lighter or match. Let the flames subside (this will burn off the alcohol), about 30 seconds.

  3. Stir gently to combine.
