 ½ cup BBQ Sauce (divided)

 1 ½ cups Shredded Mozzarella Cheese
 ½ cup Red Onion (thinly sliced)
 ¼ cup Fresh Cilantro (chopped)
 ¼ cup Fresh Pineapple (diced, optional)
 1 tsp Red Pepper Flakes (optional, for heat)
For the BBQ Chicken
 1 tbsp Olive Oil
 250 g Chicken Breast (or 2 small breasts)
 ½ tsp Smoked Paprika
 ½ tsp Garlic Powder
 ½ tsp Salt
 ¼ tsp Black Pepper
 ¼ cup BBQ Sauce
