500 g flank steak or sirloin, thinly sliced against the grain into 1/4" strips
16 bamboo skewers, soaked in water for 30 minutes
Satay Marinade
2 tbsp soy sauce
1 tbsp fish sauce
1 tbsp brown sugar
1 tbsp lime juice
1 tbsp vegetable oil
1 tsp ground coriander
½ tsp turmeric
2 cloves garlic, minced
1 tsp grated fresh ginger
¼ tsp chili flakes (optional)
Peanut Sauce
½ cup creamy peanut butter
⅓ cup coconut milk
1 tbsp soy sauce
1 tbsp rice vinegar or lime juice
1 tbsp brown sugar or honey
1 tsp chili garlic sauce (optional)
Warm water, to thin as needed
Marinate the Beef

In a bowl, mix all marinade ingredients until combined.
Add sliced beef and toss to coat evenly .
Cover and refrigerate for at least 1 hour , preferably 2 hours.
Meanwhile, soak the bamboo skewers in water.
Prepare the Peanut Sauce

In a small saucepan over low heat, combine peanut butter, coconut milk, soy sauce, vinegar, sugar, and chili garlic sauce.
Stir continuously until smooth and heated through (about 3–5 minutes).
Add warm water a little at a time until desired dipping consistency is reached.
