In a medium non-stick saucepan over medium-low heat, melt 1 tbsp butter.
Add sweetened condensed milk and cocoa powder, whisking constantly to blend smoothly.
Stir continuously with a wooden spoon or silicone spatula to prevent sticking or burning.
Cook for 10–15 minutes, until the mixture thickens and pulls away from the bottom and sides of the pan. It should have a fudge-like consistency.
Pour the mixture into a greased plate or dish and let it cool at room temperature.
Once cool, cover and refrigerate for at least 1 hour, or until firm.
Grease your hands with a little butter.
Scoop out small portions and roll into 1-inch balls.
Roll each ball in chocolate sprinkles or your topping of choice.
Place into mini paper cups if desired.
Serve with espresso, hot chocolate, or port wine.
