Brigadeiro

Makes about 20–24 brigadeiros
 1 tbsp unsalted butter (plus extra for rolling)
 1 clove sweetened condensed milk
 2 tbsp unsweetened cocoa powder
 ¼ tsp salt (optional)
 Chocolate sprinkles or other toppings (e.g. desiccated coconut, chopped nuts)
Make the chocolate mixture

  • In a medium non-stick saucepan over medium-low heat, melt 1 tbsp butter.

  • Add sweetened condensed milk and cocoa powder, whisking constantly to blend smoothly.

  • Stir continuously with a wooden spoon or silicone spatula to prevent sticking or burning.

  • Cook for 10–15 minutes, until the mixture thickens and pulls away from the bottom and sides of the pan. It should have a fudge-like consistency.

Cool the mixture

  • Pour the mixture into a greased plate or dish and let it cool at room temperature.

  • Once cool, cover and refrigerate for at least 1 hour, or until firm.

Shape the Brigadeiros

  • Grease your hands with a little butter.

  • Scoop out small portions and roll into 1-inch balls.

  • Roll each ball in chocolate sprinkles or your topping of choice.

  • Place into mini paper cups if desired.
