1 medium onion, diced

3 cups green cabbage, chopped (about ½ medium head)
2 medium carrots, peeled & diced
2 celery stalks, diced
1 can diced tomatoes
1 can tomato sauce
4 cups beef broth (or chicken broth)
½ cup uncooked white rice
1 tbsp Worcestershire sauce
1 tsp smoked paprika
1 tsp dried thyme
1 tsp dried oregano
1 bay leaf
Salt & black pepper, to taste

2 tbsp brown sugar (for a sweet Hungarian-style version)
½ tsp chili flakes (for heat)

Brown the Beef

Heat a large pot over medium-high heat.
Add ground beef and cook for 5–7 minutes , breaking it apart as it browns.
Drain excess fat if necessary (leave ~1 tablespoon if using lean beef).
Season lightly with salt and pepper.
