For the Meatloaf
1 kg ground beef (85/15 recommended)
1 cup breadcrumbs
1 small onion, finely diced
2 cloves garlic, minced
2 large eggs
½ cup whole milk
¼ cup ketchup
2 tbsp Worcestershire sauce
1 tsp salt
½ tsp ground black pepper
1 tsp dried thyme
For the Glaze
⅓ cup ketchup
2 tbsp brown sugar
1 tbsp Dijon mustard
For the Garlic Mashed Potatoes
1 kg Yukon gold potatoes, peeled and cubed
4 cloves garlic, peeled
4 tbsp unsalted butter
½ cup heavy cream (or milk)
Salt and pepper, to taste
Fresh chopped parsley (for garnish)
Prepare the Meatloaf

Preheat oven to 375°F (190°C).
In a large bowl, mix together all the meatloaf ingredients until just combined. Don’t overmix.
Shape the mixture into a loaf and place it in a greased baking dish or loaf pan.
Apply the Glaze

In a small bowl, mix the glaze ingredients.
Spread the glaze evenly over the top of the meatloaf.
Bake

Bake for 50–60 minutes, or until the internal temperature reaches 160°F (71°C).
Let rest for 10 minutes before slicing.

While the meatloaf bakes, boil potatoes and garlic in salted water until tender (about 15–20 minutes).
Drain, then mash with butter and cream. Season with salt and pepper to taste.
