This heartwarming dish combines a juicy, flavorful meatloaf glazed with a sweet and tangy tomato-based sauce, served alongside creamy garlic mashed potatoes. A true comfort food favorite that's simple to prepare yet incredibly satisfying.
Preheat oven to 375°F (190°C).
In a large bowl, mix together all the meatloaf ingredients until just combined. Don’t overmix.
Shape the mixture into a loaf and place it in a greased baking dish or loaf pan.
In a small bowl, mix the glaze ingredients.
Spread the glaze evenly over the top of the meatloaf.
Bake for 50–60 minutes, or until the internal temperature reaches 160°F (71°C).
Let rest for 10 minutes before slicing.
While the meatloaf bakes, boil potatoes and garlic in salted water until tender (about 15–20 minutes).
Drain, then mash with butter and cream. Season with salt and pepper to taste.
Serve hot with a sprinkle of parsley. Add green beans or a side salad for a complete meal.
