In this comforting dish, thick cod fillets are gently simmered in a rich, smoky broth made with Spanish chorizo, chickpeas, tomatoes, and plenty of smoked paprika. It's warming, filling, and layered with flavor—and it comes together in under an hour in one pot.

Cod with Chickpeas, Chorizo & Smoked Paprika

For the Stew
 4 cod fillets (about 5–6 oz each), skinless
 6 oz cured Spanish chorizo, sliced or diced
 1 tbsp olive oil
 1 medium onion, chopped
 2 cloves garlic, minced
 1 tsp smoked paprika (pimentón)
 ½ tsp sweet paprika
 ¼ tsp chili flakes (optional)
 1 can diced tomatoes
 1 can chickpeas, drained and rinsed
 ½ cup dry white wine (or seafood/chicken stock)
 ½ cup water or broth (as needed)
 Salt and black pepper, to taste
 Juice of ½ lemon
Garnish
 Fresh parsley, chopped
 Crusty bread or rice (optional for serving)
 Lemon wedges
Sauté the Chorizo & Aromatics

  1. Heat olive oil in a large, deep skillet or Dutch oven over medium heat.

  2. Add chorizo and cook for 3–4 minutes until it begins to crisp and release its oil.

  3. Add onion and cook until soft and translucent, about 5 minutes.

  4. Stir in garlic, smoked paprika, sweet paprika, and chili flakes (if using). Cook for 1 minute to bloom the spices.

Build the Broth

  1. Pour in white wine, scraping up any browned bits from the bottom of the pan.

  2. Simmer for 2 minutes to reduce slightly.

  3. Stir in diced tomatoes and chickpeas, then season with salt and pepper.

  4. Add ½ cup water or broth if it looks too thick—this should be a saucy base, not soup.

  5. Simmer uncovered for 10–12 minutes to let the flavors meld and broth reduce.

Add the Cod

  1. Season cod fillets with salt and pepper on both sides.

  2. Nestle them gently into the stew.

  3. Cover and let simmer for 6–8 minutes, or until cod is opaque and flakes easily with a fork.

  4. Finish with a squeeze of lemon juice.

Serve

  1. Spoon the chickpea-chorizo mixture into bowls.

  2. Place a cod fillet on top of each.

  3. Garnish with chopped parsley and serve with lemon wedges and bread or rice, if desired.
