Crab & Avocado Stack

Crab Layer
 7 oz fresh crab meat (lump or claw)
 1 tbsp mayonnaise
 1 tsp Dijon mustard
 1 tsp lemon juice
 1 tbsp fresh chives, finely chopped
 Salt and freshly ground white or black pepper
Avocado Layer
 2 ripe avocados
 1 tsp lime or lemon juice
 Salt, to taste
Optional Extras
 1 tsp olive oil
 Microgreens or chives, for garnish
 Lemon zest, for garnish
 Optional base: cucumber slices or lightly toasted brioche rounds
Prepare the Crab Mixture

In a bowl, gently combine crab meat, mayonnaise, Dijon mustard, lemon juice, chives, salt, and pepper.

Mix carefully to keep the crab pieces intact. Chill while preparing the avocado.

Prepare the Avocado

Peel and pit avocados. Mash lightly with a fork, leaving some texture.

Season with citrus juice and salt. Taste and adjust seasoning.

Assemble the Stack

Place a ring mold on a serving plate (or free-form if preferred).

Add a layer of avocado, gently pressing down.

Top with a layer of crab mixture.

Carefully lift the ring mold to reveal a clean stack.

Repeat for remaining servings.

Finish & Serve

Garnish with microgreens, chives, or lemon zest.

Serve immediately or chilled for up to 30 minutes.
