Grilled Peach & Prosciutto Skewers

 3 ripe but firm peaches, pitted and cut into 6–8 wedges each
 6 oz prosciutto, sliced thinly (about 12 slices, halved lengthwise)
 4 oz fresh mozzarella balls (bocconcini) or small cubes of goat cheese or feta
 1 tbsp olive oil
 Freshly cracked black pepper
 Fresh basil leaves, small or torn
 Optional: balsamic glaze for drizzling

  • Wrap each peach wedge with a strip of prosciutto.

  • Alternate on skewers: one wrapped peach, one cheese ball, one basil leaf — repeat until the skewer is filled (usually 2 of each per skewer).

  • Brush lightly with olive oil and crack black pepper over top.

Grill the Skewers

  • Heat grill or grill pan over medium-high heat.

  • Grill skewers for 1–2 minutes per side until peaches are lightly charred, prosciutto crisps, and cheese softens slightly.

  • Remove carefully and let cool slightly.
