Lobster Pasta in Cream Sauce

Lobster
 2 lobster tails (about 300–350 g / 10–12 oz total)
 Salt, to taste
Pasta & Sauce
 9 oz linguine, tagliatelle, or fettuccine
 1 tbsp olive oil
 1 tbsp butter
 2 cloves garlic, minced
 ½ cup dry white wine
 ¾ cup heavy cream
 ½ cup Parmesan cheese, finely grated
 1 tsp lemon juice
 Salt and freshly ground black pepper
 Optional: pinch of chili flakes
Garnish
 Fresh parsley or chives
 Lemon zest

Cook the Lobster

Bring a pot of salted water to a gentle boil.

Add lobster tails and cook for 3–4 minutes until just opaque.

Remove, cool slightly, then crack shells and remove meat. Chop into bite-size pieces and set aside.

Cook the Pasta

Cook pasta in generously salted water until al dente according to package instructions.

Reserve ½ cup of pasta water, then drain.

Make the Cream Sauce

Heat olive oil and butter in a wide pan over medium heat.

Add garlic and sauté for 30 seconds until fragrant (do not brown).

Pour in white wine and simmer for 3–4 minutes until reduced by half.

Lower heat and stir in cream. Simmer gently for 5 minutes.

Add Parmesan, lemon juice, salt, pepper, and chili flakes if using.

Add lobster meat and cooked pasta to the sauce.

Toss gently, adding a splash of pasta water if needed to loosen the sauce.

Heat for 1–2 minutes until everything is perfectly coated.
