 6 cups fresh or canned peaches (peeled and sliced)
 ½ cup granulated sugar
 1 tbsp lemon juice
 1 tsp vanilla extract
 1 tsp ground cinnamon
 1 tbsp cornstarch (for thickening)
For the Cobbler Topping
 1 cup all-purpose flour
 ½ cup granulated sugar
 1 tbsp brown sugar
 1 ½ tsp baking powder
 ¼ tsp salt
 ½ cup unsalted butter (melted)
 ¾ cup whole milk
 1 tsp vanilla extract

Preheat oven to 375°F (190°C).

Prepare the Peach Filling

  • In a mixing bowl, combine peaches, sugar, lemon juice, vanilla, cinnamon, and cornstarch.

  • Toss until well-coated.

  • Pour the mixture into a greased 9x13-inch baking dish or deep pie dish.

Make the Topping

  • In a separate bowl, whisk together flour, granulated sugar, brown sugar, baking powder, and salt.

  • Add in the milk, melted butter, and vanilla extract. Stir just until combined—do not overmix.

Assemble the Cobbler
