For the Peach Filling
 8 peaches, peeled and sliced
 ½ cup granulated sugar
 ¼ cup brown sugar
 1 tsp vanilla extract
 1 tsp cinnamon
 ½ tsp nutmeg
 1 tbsp lemon juice
 2 tbsp cornstarch
For the Cobbler Topping
 1 cup all-purpose flour
 ¼ cup granulated sugar
 ¼ cup brown sugar
 1 tsp baking powder
 ½ tsp salt
 6 tbsp cold unsalted butter, cubed
 ¼ cup boiling water
Preheat Oven & Prepare Peaches

  1. Preheat oven to 375°F (190°C).

  2. In a large bowl, toss peach slices with sugars, vanilla, lemon juice, cinnamon, nutmeg, and cornstarch until well coated.

Bake the Peach Base

  1. Pour peach mixture into a 9x13-inch baking dish or a large cast iron skillet.

  2. Bake for 10 minutes to begin softening the peaches.

Make the Cobbler Topping

  1. In a medium bowl, mix flour, sugars, baking powder, and salt.

  2. Cut in the butter with a pastry cutter or fork until mixture resembles coarse crumbs.
