Prosciutto-Wrapped Figs

 6 fresh figs, halved (Black Mission or Brown Turkey preferred)
 6 thin slices prosciutto, halved lengthwise
 2 oz goat cheese or blue cheese (optional, for stuffing)
 Fresh thyme leaves or honey (optional garnish)
 Freshly ground black pepper
 Olive oil, for brushing
Prep the Figs

  1. Preheat your oven to 400°F (200°C).

  2. Wash and halve the figs lengthwise.

  3. If using cheese, gently stuff about 1/2 teaspoon into the center of each fig half.

Wrap with Prosciutto

  1. Wrap each fig half with a strip of prosciutto. It should encase the fig snugly but not too tight.

  2. If needed, secure with a toothpick (especially if cheese is added).

Bake

  1. Arrange the wrapped figs on a parchment-lined baking sheet.

  2. Lightly brush the tops with olive oil and sprinkle with black pepper.

  3. Bake for 10 minutes, or until the prosciutto is crispy and the figs are warm and caramelized.
