Puff Pastry Pinwheels with Tapenade & Goat Cheese

For the Pinwheels
 1 sheet puff pastry, thawed (from a 17.3 oz box, usually 2 sheets per box)
  cup black or green olive tapenade (store-bought or homemade — see below)
 4 oz goat cheese, softened
 1 tbsp fresh thyme or chopped rosemary (optional)
 1 egg, beaten with 1 tbsp water (egg wash, optional for golden color)
Optional: Quick Homemade Tapenade
 ½ cup pitted olives (Kalamata or green)
 1 tbsp capers
 1 cup garlic, minced
 2 tsp lemon juice
 1 tbsp olive oil
 Optional: small amount of anchovy paste or chopped sun-dried tomatoBlend or finely chop everything together into a coarse paste.
Preheat & Prep

  • Preheat oven to 400°F (200°C).

  • Line a baking sheet with parchment paper.

  • Lightly flour your work surface.

Assemble the Pinwheels

  1. Roll out the puff pastry into a rectangle (10"x12") if needed.

  2. Spread a thin, even layer of olive tapenade over the entire surface.

  3. Dot and spread small amounts of goat cheese evenly on top.

  4. Sprinkle with herbs if using.

  5. Starting on the long edge, roll tightly into a log (like a jelly roll).

  6. Wrap the log in plastic wrap and chill for 15–30 minutes — this helps keep the slices clean when cutting.

Slice & Bake

  2. Place on the lined baking sheet, spaced slightly apart.
