Silky raspberry panna cotta made with cream, vanilla, and fresh raspberry coulis. This elegant no-bake dessert is perfect for Valentine’s Day, dinner parties, or romantic celebrations.

Raspberry Panna Cotta

Panna Cotta
 2 cups heavy cream
  cup granulated sugar
 1 tsp vanilla extract or seeds from ½ vanilla bean
 2 ½ tsp powdered gelatin (or 3 gelatin sheets)
 3 tbsp cold water
Raspberry Coulis
 7 oz fresh or frozen raspberries
 2 tbsp sugar
 1 tsp lemon juice
Optional Garnish
 Fresh raspberries
 Mint leaves
 White chocolate shavings
Bloom the Gelatin

Sprinkle gelatin over cold water in a small bowl.

Let stand for 5 minutes until softened.

Heat the Cream

In a saucepan over medium-low heat, combine cream, sugar, and vanilla.

Heat gently until sugar dissolves and mixture is hot but not boiling.

Remove from heat and stir in bloomed gelatin until fully dissolved.

Set the Panna Cotta

Pour mixture into serving glasses or molds.

Cool slightly, then refrigerate for at least 4 hours until set.

Make the Raspberry Coulis

Simmer raspberries, sugar, and lemon juice in a small saucepan for 5–7 minutes.

Blend until smooth and strain to remove seeds (optional).

Cool completely.

Serve

Spoon raspberry coulis over set panna cotta.

Garnish with fresh raspberries or mint and serve chilled.
