Salmon & Dill Potato Nests

For the Potato Nests
 4 medium russet potatoes, peeled and grated
 2 tbsp cornstarch (helps crisp and bind)
 1 tsp salt
 ½ tsp black pepper
 2 tbsp unsalted butter, melted (plus extra for greasing)
For the Filling
 4 oz smoked salmon, sliced into bite-sized ribbons
 ½ cup crème fraîche (or sour cream)
 1 tbsp fresh dill, finely chopped (plus sprigs for garnish)
 1 tsp lemon zest
 1 tsp lemon juice
 Freshly ground black pepper, to taste
Prep the Potatoes

  1. Peel and grate the potatoes using a box grater or food processor.

  2. Place the grated potatoes in a clean tea towel and squeeze firmly to remove as much moisture as possible.

  3. Transfer to a bowl and toss with cornstarch, salt, pepper, and melted butter until evenly coated.

Form the Nests

  1. Lightly grease a mini muffin tin with melted butter.

  2. Take a heaping tablespoon of potato mixture and press it firmly into each muffin cup, shaping it up the sides to form a “nest” shape.

  3. Use the back of a spoon or your fingers to create a small well in the center.

Bake the Nests

  1. Preheat oven to 400°F (200°C).

  2. Bake for 18–20 minutes, or until golden brown and crisp at the edges.

  3. Remove from the oven and let cool in the tin for 5 minutes before gently lifting them out.

Prepare the Filling

  1. In a small bowl, mix crème fraîche, dill, lemon zest, and lemon juice.

  2. Season with freshly ground black pepper to taste.

Assemble

  1. Spoon or pipe about 1 teaspoon of the dill crème fraîche into each potato nest.

  2. Top with a ribbon of smoked salmon, twisting it for a rose-like shape.

  3. Garnish with a small sprig of fresh dill.
