This simple yet sophisticated starter features sweet melon balls or cubes paired with savory, silky Serrano ham, threaded onto skewers and finished with a sticky-sweet balsamic reduction. In a small saucepan, bring balsamic vinegar to a simmer over medium heat.
Add honey (if using) and reduce heat to low.
Simmer gently for 5–7 minutes, or until thickened to a syrupy consistency that coats a spoon.
Remove from heat and let cool—it will thicken further as it cools.
Cut melon into bite-sized cubes or use a melon baller to create small spheres.
Tear ham slices in half lengthwise (so they’re long, narrow strips).
On each skewer or cocktail pick, thread one basil leaf (if using), folded slice of ham, and one melon ball or cube.
