In a large bowl, whisk together flour, sugar, baking powder, cinnamon, nutmeg, and salt.
In a separate bowl, whisk egg, milk, vanilla, and melted butter.
Add wet ingredients to dry and mix until just combined.
Fold in the diced apples.
In a deep skillet or saucepan, heat 2–3 inches of oil to 350°F (175°C).
Line a plate with paper towels.
Using a spoon or small ice cream scoop, carefully drop batter into hot oil (don’t overcrowd the pan).
Fry for about 2–3 minutes per side, or until golden brown and cooked through.
Transfer to paper towels to drain.
For glaze: Whisk together powdered sugar, milk, and vanilla. Dip each fritter while warm and set on a rack.
