This Orange and Almond Flourless Cake is a gluten-free, moist, and fragrant dessert made with whole oranges and almond flour. The natural sweetness of oranges, combined with the nuttiness of almonds, creates a rich, citrusy flavor with a delicate texture. For the Cake
2 large oranges (organic, unpeeled)
5 large eggs
1 cup (200g) granulated sugar (or honey for a natural option)
2 ½ cups (250g) almond flour (finely ground)
1 tsp baking powder
½ tsp salt
1 tsp vanilla extract

Cook the Oranges

- Boil the Oranges:
- Place whole oranges (unpeeled) in a pot of water.
- Bring to a boil and simmer for 1 hour until soft.
- Drain and let them cool.
- Blend the Oranges:
- Once cool, cut into quarters (removing any seeds).
- Blend into a smooth purée using a food processor.
