 2 large oranges (organic, unpeeled)
 5 large eggs
 1 cup (200g) granulated sugar (or honey for a natural option)
 2 ½ cups (250g) almond flour (finely ground)
 1 tsp baking powder
 ½ tsp salt
 1 tsp vanilla extract
 1 tsp orange zest (optional for extra citrus flavor)

Cook the Oranges

    • Place whole oranges (unpeeled) in a pot of water.
    • Bring to a boil and simmer for 1 hour until soft.
    • Drain and let them cool.
  • Blend the Oranges:
    • Once cool, cut into quarters (removing any seeds).
