2 large heads cauliflower
3 tbsp olive oil
1 tsp kosher salt
½ tsp black pepper

½ cup BBQ sauce (smoky or sweet)
1 tbsp maple syrup or honey
1 tbsp apple cider vinegar or lemon juice

½ tsp garlic powder

Prep the cauliflower
