Dark Chocolate Mendiants

Mendiants are traditional French confections made of rich chocolate disks adorned with a blend of dried fruits and nuts. Elegant in presentation and versatile in toppings, they make a perfect gift or after-dinner treat.

 200 g dark chocolate (60–70% cocoa), chopped
 2 tbsp pistachios, shelled and roughly chopped
 2 tbsp almonds, toasted and sliced
 2 tbsp dried cranberries
 2 tbsp dried apricots, finely chopped
 2 tbsp candied orange peel, finely chopped
 Sea salt flakes (optional)
Prepare the Base

  1. Line a baking sheet with parchment paper or a silicone baking mat.

  2. Ensure your toppings are prepped and ready to go.

Melt the Chocolate

  1. Gently melt the chocolate using a double boiler, stirring until smooth.

  2. Alternatively, microwave in 20-second bursts, stirring between each.

Form the Discs

  1. Drop small spoonfuls (about 1 tbsp) of melted chocolate onto the parchment, spreading into circles ~2 inches wide.

  2. Work in batches so the chocolate doesn’t set too fast.

Top the Mendiants

  1. While still warm, decorate each disc with a mix of fruits and nuts.

  2. Lightly press toppings to ensure they adhere.

  3. Optional: Sprinkle a few sea salt flakes on top for contrast.

Chill to Set
