Bacon & Blue Cheese Stuffed Dates

These Bacon & Blue Cheese Stuffed Dates are a match made in appetizer heaven: sweet Medjool dates stuffed with tangy blue cheese, wrapped in smoky bacon, and baked until crispy on the outside and gooey inside. 12 stuffed dates
 12 Medjool dates, pitted
 2 oz blue cheese (or gorgonzola), crumbled
 6 slices bacon, cut in half crosswise
 Toothpicks, for securing

Prep the Dates

  2. Make a small slit in each date and remove the pit if not already pitted.

  3. Stuff each date with about ½ teaspoon of blue cheese. Don’t overfill — just enough to create a creamy center.

Wrap with Bacon
