6 slices of mortadella, large and thinly sliced (ask for it deli-thin)
½ cup ricotta cheese (or whipped cream cheese or mascarpone)
¼ cup shelled pistachios, finely chopped
1 tbsp Parmesan, finely grated (optional, for extra umami)
1 tsp lemon zest
½ tsp cracked black pepper
Fresh chives or microgreens (optional garnish)

Make the Filling

Stir until creamy and evenly combined.
Assemble the Roll-Ups

Spoon about 1–2 tsp of the filling in a line along one edge.
