Sprinkle gelatin over cold water in a small bowl.
Let stand for 5 minutes until softened.
In a saucepan over medium-low heat, combine cream, sugar, and vanilla.
Heat gently until sugar dissolves and mixture is hot but not boiling.
Remove from heat and stir in bloomed gelatin until fully dissolved.
Pour mixture into serving glasses or molds.
Cool slightly, then refrigerate for at least 4 hours until set.
Simmer raspberries, sugar, and lemon juice in a small saucepan for 5–7 minutes.
Blend until smooth and strain to remove seeds (optional).
Cool completely.
Spoon raspberry coulis over set panna cotta.
Garnish with fresh raspberries or mint and serve chilled.
