 1 medium onion, chopped
 2 cloves garlic, minced
 4 cups parsnips, peeled and chopped
 2 apples (Granny Smith or another tart variety), peeled, cored, and chopped
 1 tsp ground cumin
 ½ tsp ground coriander
 ¼ tsp ground nutmeg
 3 cups vegetable broth
 1 cup water
 Salt and pepper, to taste
 ½ cup cream or coconut milk (optional, for creaminess)
 Fresh thyme or parsley, for garnish
Sauté Aromatics

Heat olive oil in a large pot over medium heat. Add the onion and sauté for 5–6 minutes until softened. Add garlic and cook for another minute.

Cook Parsnips and Apples
