For the Cookies
 1 cup unsalted butter, softened
 ½ cup powdered sugar
 2 large egg yolks
 1 large egg
 1 tsp vanilla extract

 ½ tsp baking powder
 ¼ tsp salt
For the Filling
 1 cup dulce de leche (store-bought or homemade)

Make the Dough

  1. In a large mixing bowl, cream butter and powdered sugar until pale and fluffy.

  2. Beat in the egg yolks, egg, and vanilla extract.

  3. In a separate bowl, whisk together flour, cornstarch, baking powder, and salt.

  4. Gradually mix dry ingredients into the wet mixture until a soft dough forms.

Chill and Roll

  1. Divide dough in half, flatten into discs, wrap in plastic wrap, and refrigerate for 30 minutes.

  2. Preheat oven to 350°F (175°C).

  3. Roll out dough on a floured surface to about ¼ inch (6 mm) thickness.

  4. Cut into 2-inch rounds using a cookie cutter.

Bake the Cookies

Assemble the Alfajores
