 12 Medjool dates, pitted
 4 oz goat cheese, softened
 3 tbsp pistachios, finely chopped
 1 tsp honey (optional)
 Freshly ground black pepper

Prepare the Dates

Slice each date lengthwise and remove the pit if not already pitted. Be careful not to cut all the way through.

Gently open the dates and set aside.
