12 Medjool dates, pitted
4 oz goat cheese, softened
3 tbsp pistachios, finely chopped
1 tsp honey (optional)
Freshly ground black pepper
Optional garnish: thyme leaves or microgreens

Prepare the Dates
1 Slice each date lengthwise and remove the pit if not already pitted. Be careful not to cut all the way through.
