Preheat & Prep
1
-
Preheat oven to 400°F (200°C).
-
Line a baking sheet with parchment paper.
-
Lightly flour your work surface.
Assemble the Pinwheels
2
-
Roll out the puff pastry into a rectangle (10"x12") if needed.
-
Spread a thin, even layer of olive tapenade over the entire surface.

Dot and spread small amounts of goat cheese evenly on top.
-
Sprinkle with herbs if using.
-
Starting on the long edge, roll tightly into a log (like a jelly roll).

Wrap the log in plastic wrap and chill for 15–30 minutes — this helps keep the slices clean when cutting.
Slice & Bake

-
Place on the lined baking sheet, spaced slightly apart.
-
Brush the tops lightly with egg wash for shine (optional).

-
Let cool for a few minutes before serving.
Serve
Flavor Variations
5
-
Use pesto or sun-dried tomato spread instead of tapenade.
-
Add a sprinkle of grated parmesan or crushed red pepper for extra punch.
-
Try with cream cheese + caramelized onion + thyme for a sweeter variation.
Pairing Suggestions
6
-
Wine: Crisp Sauvignon Blanc, Cava, or dry rosé
-
Cocktail: Dirty martini, French 75, or lemon gin spritz
-
Non-alcoholic: Sparkling rosemary lemonade or cucumber tonic
