For the Filling
 1 cup cooked turkey, finely chopped or shredded
 ¼ cup cream cheese or goat cheese, softened
 3 tbsp cranberry sauce (whole berry or homemade)
 1 tsp fresh thyme (or ½ tsp dried)
 Salt and black pepper to taste
For the Phyllo Parcels
 6 sheets phyllo pastry, thawed
 4 tbsp unsalted butter, melted (or olive oil)
 Optional: sesame seeds or poppy seeds for garnish
For Serving
 Extra cranberry sauce or gravy on the side
 Fresh herbs or microgreens for garnish
Prepare the Filling

  1. In a bowl, mix:

    • Cooked turkey

    • Cream cheese

    • Cranberry sauce

    • Thyme, salt, and pepper

  2. Mix until well combined but still chunky.

Set Up the Phyllo

  1. Preheat oven to 190°C / 375°F. Line a baking sheet with parchment paper.

  2. Lay 1 sheet of phyllo on a clean surface. Cover the rest with a damp cloth.

  3. Brush phyllo lightly with melted butter, then fold in half lengthwise.

  4. Place 1 tablespoon of filling near the bottom of the strip.

Fold into Parcels

  1. Fold phyllo over the filling to form a triangle (like folding a flag).

  2. Continue folding upward in triangles until sealed.

  3. Brush the outside with butter and place seam-side down on the tray.

  4. Repeat with remaining filling and phyllo.
